Even if you’re not exactly comfortable in the kitchen and macaroni and cheese out of the box is your current culinary masterpiece, you can still make amazing crepes for your loved ones. While crepes may seem intimidating, this distinctly French dish is surprisingly easy to make. The hard part really only comes when it is time to flip them, but we’ll get to that in a bit.
If you’re ready to be a little adventurous and want to treat your loved ones to something special, here is my quick and easy recipe for amazing crepes. Trust me, all you need are a few ingredients, along with a little time and patience and you will feel like a French chef by the time you are finished making the crepes.
You will first need to gather the following six ingredients before you get started.
- 1 cup flour (spooned and leveled)
- 1 tbsp sugar
- ¼ tsp coarse salt
- 1 ½ cup whole milk
- 4 eggs (large)
- 3 tbsp melted unsalted butter
The first step is to combine the milk, eggs, melted butter, sugar, salt and flour in a blender. If you don’t own a blender, be ready to whip the mixture with a whisk. You want the mixture to be smooth with a few bubbles on top, and to have the same consistency as heavy cream. I recommend setting the blender on “puree” and letting it run for about 30 seconds. This is usually enough to get the batter to the right consistency. Once you are finished let the batter set for at least 15 minutes before placing on the skillet.
You will want to heat a 12 inch non-stick skillet over medium heat and lightly coat the bottom with butter. Pour around ⅓ cup of batter onto the skillet and carefully spread it evenly around the bottom. After 2 to 3 minutes the underside of the crepe should be golden brown, and this means that it is time to flip. This is when it can get a little tricky.
After several mistakes I’ve learned that the easiest way to flip a thin crepe is with a rubber spatula and my fingers. Yes, the crepe is a little warm but this really is the easiest way to flip it without ruining it. Use the spatula to loosen the edges and then quickly flip it over with your fingertips. It might not sound professional, but your crepes will look amazing. After one minute on the other side it is time to serve the crepe. Keep repeating these steps until you are out of batter.
Garnish the crepes with fruit, cinnamon and sugar or even syrup and watch your loved ones be amazed by your culinary skills.
